Executive Head Chef

Jamie Welch

Jamie Welch is our Executive Head Chef here at Gillray’s Steakhouse & Bar. Jamie joined Gillray’s in October 2016 but has worked at Marriott Hotels for almost 15 years including London Marriott Hotel Grosvenor Square and Marriott Meon Valley in Southampton. Jamie was instrumental in building the food and beverage team at Marriott Hotel Sisli Turkey as well as pivotal to the success of Marriott Grosvenor Square’s meeting space and catering concept Meetings Imagined®, which was later rolled out globally. Other notable achievements include winning the accolade of Marriott Chef of the Year and becoming a member of the European Culinary Advisory Board for UK & London.

Executive Sous Chef

Budiono Sukim

Budiono Sukim is the Executive Sous Chef at Gillray’s Steakhouse & Bar at the London Marriott Hotel County Hall.

Sukim joined Gillray’s in January 2016 from the Four Seasons Hotel in Jumeirah Beach, Dubai, where he was the Chef de Cuisine.

Budiono returned to the UK having previously worked with the Four Seasons Hotels in both Park Lane and Hampshire. Budiono was also a part of the re-opening team of the Savoy, A Fairmont Hotel, in its 2AA Rosette River Restaurant. Following two successful years in the restaurant he then went on to run the Savoy’s Banqueting Operations, catering for some of the largest and most prestigious events in London.

Budiono brings a wealth of knowledge, experience and technical skill to the role that he was able to demonstrate during the cooking trial that took place at the JW Marriott Marquis in Dubai.

Sam Mitchell

Sam has been working in the London Cocktail bar scene for the past 6 years.  The past 5 have been spent within Marriott hotels and Sam helped open The G&T Lounge in the West India Quay Marriott Hotel Bar.  Sam joined Gillray’s Bar earlier in 2015 and has been instrumental in increasing the number of Gins to well over 100!
