Executive Head Chef

Sylvain Chevereau

Sylvain Chevereau is the Executive Head Chef at Gillray’s Steakhouse & Bar at the London Marriott Hotel County Hall. Sylvain joins Gillray’s in February 2016 from nearby St. Ermin’s Hotel, a member of Marriott Hotels’ Autograph Collection, where he was Executive Chef, playing an instrumental role in establishing the award-winning Caxton Grill with MasterChef: The Professionals finalist Adam Handling, which has gone on to achieve 3 AA Rosettes.

Building on his hospitality training in France at the 4 AA-starred Chateau La Chaire in Jersey and the 2-Michelin starred L’Auberge des Templiers in Sologne, Sylvain has gone on to work at a range of well-established hotels including The Lancaster Hotel and K-West Hotel in London and The Balmoral Hotel in Scotland.

He is experienced across all areas of food service including banqueting and private dining, high-end takeaway across six different cuisines and fine dining. Sylvain also extends his drive and passion to providing distinctive quality in all aspects of culinary service.

Executive Sous Chef

Budiono Sukim

Budiono Sukim is the Executive Sous Chef at Gillray’s Steakhouse & Bar at the London Marriott Hotel County Hall.

Sukim joined Gillray’s in January 2016 from the Four Seasons Hotel in Jumeirah Beach, Dubai, where he was the Chef de Cuisine.

Budiono returned to the UK having previously worked with the Four Seasons Hotels in both Park Lane and Hampshire. Budiono was also a part of the re-opening team of the Savoy, A Fairmont Hotel, in its 2AA Rosette River Restaurant. Following two successful years in the restaurant he then went on to run the Savoy’s Banqueting Operations, catering for some of the largest and most prestigious events in London.

Budiono brings a wealth of knowledge, experience and technical skill to the role that he was able to demonstrate during the cooking trial that took place at the JW Marriott Marquis in Dubai.

Head Barman

Sam Mitchell

Sam has been working in the London Cocktail bar scene for the past 6 years.  The past 5 have been spent within Marriott hotels and Sam helped open The G&T Lounge in the West India Quay Marriott Hotel Bar.  Sam joined Gillray’s Bar earlier in 2015 and has been instrumental in increasing the number of Gins to well over 100!
